  • CHEF'S RECIPE: SYLVAIN ROUCAYROL’S MADELEINES

    Sylvain Roucayrol, the resident chef at the Tuba Club in Marseille, shares his recipe for Madeleines and Kalamansi-Yuzu jam. A dessert with a delicious citrus flavor and hints of honey to enjoy at tea time. Recipe for 6 people Cooking time: 80 minutes - Preparation the day before Ingredients Madeleines 200 g hazelnut butter 200 g flour 12 g baking powder 3 eggs 125 g brown sugar 1 g vanilla 4 lemons 60 g milk at room temperature 80 g honey Yuzu-Kalamansi Marmelade 300 g fresh Yuzu 100 g Kalamansi 100 g sugar 200 g acacia honey Preparation Marmelade : Wash the citrus fruits under cold water Cut in 2 and remove the seeds Cut into small pieces and add to a wok with the sugar and stew for about 30 min Add the honey and cook again over low heat for 45 minutes Keep cool Madeleines : Melt the butter into a hazelnut shape Pour the flour, baking powder and lemon zest into a mixing bowl Add the milk and honey, then the vanilla, and add the hazelnut butter, mixing gently. Finally, add the eggs and mix Refrigerate for 24 hours Put the mixture in a pastry bag, pipe into the madeleine molds Cook the madeleines for 8 minutes at 180 degrees ↳ tuba-club

  • LODGE AT MARCONI

    Nestled in the wooded hills overlooking Tomales Bay north of San Francisco, the Lodge at Marconi is a new retreat housed in former state park buildings. The hotel’s interior design was entrusted to New York architecture firm Home Studios, who revisited the 1970s Summer Camp style in a modern, upscale version. The Lodge at Marconi is a deco haven immersed in nature, dedicated to decompression and reconnection. Housed in a former retreat an hour outside of San Francisco, the Lodge at Marconi was completely redesigned by New York architecture firm Home Studios . The resort features 45 guest rooms and suites, a banquet hall, a restaurant, and gardens designed by local landscape architecture firm Dune Hai . The Lodge at Marconi pays homage to the Third Bay style, a modernist architectural style dating from the 1945-1980 period that has its roots in the San Francisco Bay Area. The 25 hectares surrounding the Lodge and the atmosphere of the Summer Camps of the 70s have defined the decorative style of the hotel. The result is a palette of natural colors that are printed in sienna, ochre, mahogany or deep olive green. Throughout, oak and cedar wood have been favored to reinforce the desired natural and warm side; the benches, headboards or door frames are custom-made by local artisans, some lighting and accessories are also dressed in wood. As part of Home Studios' desire to honor and preserve the character and heritage of the site, three bathrooms have kept their original ceramics. Elsewhere, local manufacturer Heath Ceramics provided the vintage-inspired tiles. The Lodge at Marconi team is also committed to sustainability and land preservation. Emphasis has been placed on low water consumption or the use of local oyster shells as soil to reduce the carbon footprint.     Alice Tourbier and her husband are developing luxury spa hotels located in the middle of French vineyards. Les Sources de Caudalie in Bordeaux, les Sources de Cheverny in the Loire Valley and two new establishments to come, are real treasures where the art of living and well-being are kings. Alice was kind enough to reveal all her beauty tips to us. INTERVIEW 1 - Hi Alice, can you quickly introduce yourself ? " I am Alice, 47 years old, mother of 2 teenagers. I thrive as an entrepreneur of the art of living. With my husband, I am developing "Les Sources", a collection of 4 hotels, restaurants and spas in the French vineyards. We were lucky enough to start with Les Sources de Caudalie in Bordeaux, our eco-labeled palace of vineyards. Then we opened in 2020 Les Sources de Cheverny in the Loire Valley, and today we are under construction in Burgundy and soon in Alsace. These are unique addresses with the attention of a palace and the warmth of a family home. The nature that surrounds our hotels is part of the experience. " 2 - What are your cult beauty products, the basics? " I have aged at the same time as the Caudalie range that my sister created 30 years ago now! I started with creams for young skin, then the Vinoperfect anti-spots for pregnant women and today I am a fan of their Premier Cru range, in particular le sérum and la crème . " 3 - What are your morning and evening skincare routines? " It has to go quickly! I probably don't take enough time for my skin, but I'm lucky because my skin is dense and ultimately not very sensitive. Honestly it changes my day, I really feel better with shiny hair. " 5 - Did you borrow a product or ritual from your mother or grandmother? " The ritual of drying my hair upside down. It has become the perfect opportunity to stretch my back and the back of my calves. Plus, I feel like I’m doing yoga! I always have SPF 50 in my handbag with a comb and a lip gloss that I whip out depending on the sunny weather or my hair is messy. I can’t manage to apply SPF 50 every day. And yet it was one of my mother’s beauty tips . " 6 - What is your latest wellness discovery that you love? " I travel to hotels 2 or 3 days a week, but our offices are in Paris and whenever I can, I sign up for a sports class at lunchtime. I will either cycle at Dynamo or sweat in Pilates class at The New me , or I practice yoga with Flore thanks to the classes offered by our Coworking space The Bureau. This sporty breathing has become key for me. I can no longer manage long days in the office without it. " 7- What is your favorite beauty addresses? " I love going to David Lucas , the most talented and friendly hairdresser in Paris. David has become a very good friend. But I fear I am not a good ambassador: I only have my hair done well when I leave his place! The rest of the year, my home blow-dry is done quickly, badly…" 8 - Where do you like to recharge/recover yourself? " To recharge my batteries, it's obviously Les Sources! It's a pleasure to put myself in our customers' shoes and to be able to take full advantage of our homes. It's harder to find availability in high season, but as soon as business slows down, Jérôme, my husband and I sleep in our Les Sources hotels. I enjoy being a guinea pig and testing out new hands or protocols at the Vinotherapie spa. I sometimes take part in the yoga retreats that we organize, particularly at Les Sources de Cheverny with great teachers. Otherwise, competitive intelligence is also a fun part of my job! I always have a wishlist of great places to try out, and we welcome each other quite easily between hoteliers. But to really cut it all off, I go kitesurfing in the summer in Dakhla, Morocco, or ski touring in the winter with a night in refuges. The young woman, who has always been passionate about fashion and beauty, gave us her well-being advice and shared her best tips to shine this summer. INTERVIEW 1 - Hi Mélanie, can you quickly introduce yourself? " I grew up in Paris in a multicultural environment. My mother is French and my father is Chinese. I spent all my holidays with my grandmother, on the family farm in Normandy. This is where my approach to the green was created. I have always been passionate about fashion, beauty, and image in general. I started my career on the editorial staff of Vogue France, where I spent almost 10 years on the beauty and fashion editorials.   • CHEF'S RECIPE: EMMANUEL PERRODIN'S SICILIAN PISTACHIO TART

    Emmanuel Perrodin, the resident chef at the Lilou Hotel in Hyères, Var, was kind enough to share with us his recipe for Sicilian Pistachio Tart, Orange Blossom Ice Cream and Rocket. A creamy and sublime Mediterranean recipe that brings us a little sweetness at the end of summer. Recipe for 4 tartlets Cooking time: 35 minutes - Preparation the day before Ingredients 200 g of T55 flour 100 g of icing sugar 50 g of sugar 3 eggs 170 g butter 175 g liquid cream 80 g white chocolate 65 g almond powder 25 g pistachio paste handful of pistachios 25 g rocket 1 lime liquid honey or glucose pepper salt Preparation The day before Whipped ganache with rocket : Boil 60g of whole liquid cream with 25g of pistachio paste, 6g of glucose or honey. Pour the boiling mixture over 80g of white chocolate. Once the chocolate has melted, mix well and add 150g of cold whole liquid cream. Leave to stand overnight Almond cream : Gently mix 50g of softened butter with 50g of sugar, 25g of almond powder, 25g of pistachio paste, 25g of liquid cream, 1 egg, 1g of pepper and 25g of chopped rocket. Do not froth the mixture Mix the flour with the icing sugar, 40g of almond powder and a pinch of salt  Add 120g of diced butter. Rub in by hand or with a mixer at very low speed. Add 2 beaten eggs. Work the dough (but not too much) so that it is smooth. Leave to rest for an hour before rolling out Shape the tartlet bases and leave them to rest in the fridge for another hour. Then cook them for 15 min at 170°C Then add the almond cream, filling the bottom of the tart three-quarters full. Sprinkle with a little crushed pistachios. Bake again at 170°C for 15 to 20 min Leave to cool.     Elisabeth Dorrian lives with her family in a small coastal town in Maryland, on the East Coast of the United States. She and her husband work as coastguards there, but Lis' passion is painting. She devotes herself more and more to this art which she expresses in folk style paintings which illustrate charming rural scenes inspired by the contemplation of nature and slow living. Lis tells us about her daily life, her work and her sources of inspiration... The work of the artist Elisabeth Dorrian is part of the lineage of painters of American Folk Art, an artistic movement which extended from the 18th century to the first half of the 19th century. Folk painters also called "Primitives", most of the time self-taught, traveled from farm to farm where they painted portraits of villagers at their request, representing them in their daily environment by highlighting their social success and their religious rigor. The Folk style approaches naive art and transcribes simple and colorful rural scenes. Lis Dorrian therefore chose this medium and this style to transmit the art of slow living to the 21st century and transcribe the unconditional beauty of Nature. Interview Hi Lis, can you introduce yourself quickly ? " Bonjour! I live in a small town in rural Maryland called Chesapeake Beach with my husband and two children. It’s surrounded by rolling hills on one side and the coastline on the other. We move often as my husband and I are in the Coast Guard (which moves us to a different state every few years). My dad was also in the Coast Guard, so I’ve moved all 41 years of my life. I love getting to experience so many different regions, cultures, and people of our country, but I would really love to live in Europe one day... " When and why did you decide to become a painter ? " I’ve always loved to draw. As a child, I spent hours drawing my own house blueprints, paper dolls, and homemade greeting cards (which my mom kindly bought for a quarter). I received a scholarship to attend an art school when I was 18; however, I chose the Coast Guard Academy instead to travel and see more of the world. After having children, I transitioned from active duty to the Coast Guard reserves and slowly began to draw and paint again. Now I do it nearly everyday! " Where did you learn painting ? " I took art classes in high school but consider myself a self-taught artist. I prefer gauche and acrylic when painting but I find myself working more and more on procreate because it’s so easy to take on the road. " What are your artistic influences ? " I’m inspired by the changing seasons, folk art, watching my children fall in love with the natural world around them. I’ve spent so much of my life adjusting to new places that I find my illustrations often center around a feeling of nostalgia too. " Your works are anchored in landscapes and countryside scenes. What do you like most about the countryside ? Which campagne inspired you the most ? " I love the countryside because it evokes slow, seasonal living. To me, slow living is about noticing and savoring the little things, like the way my daughter still reaches for my hand when we’re walking, or the first daffodils popping up, or lighting a candle for dinner… It’s about living more connected to nature, which is my happy place, and being more intentional with time. I love Mary Oliver’s poem, The Summer Day, and think about the last line often: “Tell me, what is it you plan to do with your one wild and precious life?” I’m not sure if I have a favorite campagne, but I got to spend a week in the Cotswolds in England last year and fell in love! The rolling hills, stone villages, gardens, rambling books… it was perfection! " What are you other sources of inspiration ? " So many things! I keep a journal of poems and quotes that I’ve collected over the years. I also love browsing antique stores, vintage quilts, architecture, music, looking at the way people dress and put patterns together, a good book… I’m currently reading “Leaving Time” by Jodi Picoult and it’s phenomenal. I’m also very inspired by color. It’s normally the first thing that attracts me to something, whether it be art, clothing, a storefront… I love soft colors like french blue, sea foam green, pale pinks, and creamy yellows. " Who is your favorite painter? Is there French painter(s) you admire ? " How can I pick! As a child, I loved looking at my mother’s calendar by Grandma Moses, a wonderfully talented American folk artist who didn’t start painting in earnest until her seventies. Henri Matisse is another favorite of mine. I love his use of color in works like Landscape at Collioure but also loved his paper cut-outs phase. I also love Vincent Van Gogh. Green Wheat Fields (which is currently hanging in the National Gallery of Art about an hour from my house) may be one of my most favorite paintings! " . What is a typical day in Lis’s country life ? " I like to step outside first thing in the morning, no matter the season. We bought a fixer-upper on a piece of property surrounded by trees and wildlife. It’s been so fun to watch the seasons shift. We even had a fox den in our backyard this winter and watched six kits emerge in the spring. Since it’s summer and the kids are out of school, my days are currently a mix of raising children, work emails, contracts, drawing and painting, cooking, and cleaning, getting frogs out of the pool - but we take lots of breaks to swim, go for nature walks, and ride bikes. When I paint, it’s often a family affair as my children will work on their own paintings at the same time, so we all sit at the kitchen table working away. " What do you recommend to our readers to visit in Maryland ? " We live an hour or less from Washington D.C., Georgetown, and Annapolis. All of these cities have beautiful architecture, cobble-stone streets, and history. D.C. is known for its great museums, most of which are all free - including my favorite of course, the National Gallery of Art.
