The Bone Broth recipe has been used since the dawn of time. Ultra simple to make, this broth has virtues recognized by all medicines, particularly Chinese medicine. When cooked, the hen or chicken carcass releases vitamins and minerals essential to our body. It is recommended to consume it in winter when temperatures drop because it will boost our immune system and keep us in shape all season long. A course of 5 to 10 days per month for 3 months proves effective.

Bone Broth is a concentrate of vitamins, amino acids and minerals contained in the bones and spinal cord of poultry: vitamins A and K2, omega 3 and 6, calcium, iron, magnesium, zinc, potassium... All these elements help to fill deficiencies and combat fatigue.


Also, the collagen contained in the broth forms gelatin which facilitates digestion and strengthens the intestinal barrier.


It also preserves joints and helps fight rheumatism.

The Recipe

Ingredients


  • A carcass of an organic free-range hen or chicken

  • 1 onion

  • 3 cloves of garlic

  • 1 clove

  • Aromatic herbs (thyme, rosemary, bay leaf, parsley, etc.)

  • Spices according to taste (turmeric, ginger, nutmeg, etc.)

  • Organic cider vinegar

  • Sea salt

  • Pepper


Preparation


  1. Place the carcass in a large casserole dish and cover with cold water.

  2. Bring to a boil for 15 minutes over high heat

  3. Skim the broth and simmer for 2 hours over low heat.

  4. Skim off any deposits that come up and any grease

  5. Add 1 tablespoon of vinegar to extract minerals from bones

  6. Add herbs and spices halfway through cooking

  7. Turn off the heat then filter the broth


The broth can be eaten alone or garnished with vegetables or mushrooms. It can also be eaten with Chinese noodles or in ramen.

Notes
