WALNUT CAKE

This weekend, we had a beautiful autumn walk in the countryside which is starting to be tinged with red colors. We took the opportunity to collect a whole bag of nuts. As soon as we got back, we cooked a delicious, fondant and chewy walnut cake that we enjoyed with a cup of coffee ...

Recipe for 8

Prep time 10 minutes + cook time 30 mn

. Ingrédients

  • 125 g walnut

  • 2 eggs

  • 1 yogurt

  • 100 g soft or salted butter

  • 70 g flour

  • 100 g caster sugar

  • 1 vanilla sugar pack

  • 1 baking powder pack

  • icing sugar optional

. Préparation

  1. Preheat the oven to 200 ° C

  2. Coarsely mix the walnut kernels in a food processor or pestle

  3. In a bowl, beat the eggs with the sugar and vanilla sugar until the mixture foams and turns white.

  4. Melt the butter in a small saucepan

  5. Add the yogurt, melted butter and walnut powder to the mixture

  6. Add the flour little by little to avoid lumps, the yeast and a pinch of salt if you have opted for soft butter

  7. When the dough is smooth and homogeneous, pour it into a buttered 20 cm diameter mold

  8. Bake for 30 minutes, checking doneness with a knife blade.

  9. Optional: Sprinkle the top with icing sugar and walnut kernels for decoration
