TRADITIONAL FRENCH GRATINED ONION SOUP

A classic recipe of French gastronomy, simple to make and inexpensive, to enjoy on winter evenings or during your holidays in the mountains.

Recipe for 4 people

Prep time 45 minutes

 

Ingredients*

  • 5 large yellow onions

  • 1 chicken stock cube

  • 2 tbsp flour

  • 20 cl of dry white wine

  • 1 bouquet garni

  • 4 slices of bread

  • grated comté cheese

  • butter

  • salt & ground pepper


Prep

  1. Bring 1 liter of water to the boil with the stock cube

  2. Peel and slice the onions into strips

  3. (Use a casserole dish that can go in the oven at the end of the recipe). Melt butter in a casserole dish over medium heat. Place your onions. Stir until the onions become transparent then golden

  4. Sprinkle the flour over the onions. Stir

  5. Cover with white wine and broth. Stir, add the bouquet garni. cover the casserole and let simmer for 25 minutes

  6. Preheat your oven to 240° (thermostat 8)

  7. Put out the fire. Remove the bouquet garni. Place your slices of bread directly in the casserole dish and cover them generously with grated cheese. Option: you can divide your soup into individual casserole dishes and cover each casserole dish with toast

  8. Place your casserole(s) in the oven for 5/6 minutes while the cheese melts

  9. Serve hot
