In one year, Le Tuba Club has become the essential address in Marseille. Le Château de la Haute Borde is an original guest house whose vocation is to bring together travelers and artists. Nestled in a wooded park in Loir-et-Cher, the 19th century building offers five stylishly decorated rooms that respect the environment. After a dip in the swimming pool, share your breakfast with the artists in residence and the trio of arty chatelaines who lead the boat. The story repeats itself! The Château returns to its past when women organized cultural and artistic events there in the 1930s before becoming a post-war hotel-restaurant and then a holiday home. Céline Barrière, Cécile Simon and Violette Platteau therefore remix the friendly and artistic history of the place by offering neat guest rooms in the middle of a haunt of artists and their creations. In an eco-responsible approach and a desire to promote the regional economy, the trio entrusted the renovation of the Château to conscientious local craftsmen who worked in concert with the architects Charles Marmion and Jeanne Lefrand of the MPM agency. The three partners wanted to create a peaceful and elegant place with sophisticated decoration while respecting virtuous specifications. The result is a refined and natural atmosphere bathed in a palette of shades of ocher and red, authentic materials such as hemp and lime screeds, brick and marble bathrooms or a cocciopesto floor (ancestral Italian technique) . Everywhere, pieces of furniture and vintage lamps of the XXth century are found here and there, such as a desk by Jean Royère and a sofa by Martin Visser, mixed with works of art and regional handcrafted furniture. "It is above all an inclusive place that tends to build a community with respect for the environment and others, a parenthesis, conducive to reflection and creation." The guests gather in the morning around a buffet made up of, among other things, homemade products such as jams or eggs from ... resident chickens! Inness, a newly opened hotel complex in the Hudson Valley, is an ode to nature and contemplation. An intimate refuge whose beauty resides in the simplicity modeled on the Protestant values of the first Dutch settlers in the valley, and set in a setting where each point of view transports the guest to a landscape painting by the painter George Inness. The Catskills are to New York what the Cotswolds are to London! It is in this bucolic setting, located an hour and a half from New York City, that a team of aesthetes has just opened a hotel complex. In the middle of a 90 hectare park are dotted with cabins, an organic farm, a restaurant, a shop, tennis courts, two swimming pools, a spa (coming soon), a barn and a 9-hole golf course with a view impregnable on the surrounding hills. Nothing ostentatious. The restaurant offers panoramic views of the Catskills and its setting sun. For your Valentine's Day, escape to the charming guest house of chef Cybèle Idelot and her husband, located in the heart of La Haute Vallée de Chevreuse. The couple welcomes you in a bucolic setting, and serves you signature cuisine prepared with plants picked that morning in their garden. Cybèle Idelot is one of the leaders of organic cuisine at the moment. Accompanied by her husband Franck, they opened in a former coaching inn in La Haute Vallée de Chevreuse, a guest house with five rooms and a restaurant - La Ruche - which offers delicate and responsible cuisine. The chef applies the green principles of Farm to Table that she learnt in in her Californian youth. On their estate, Cybèle and Franck maintain a dream vegetable garden and orchard which supplies La Ruche and La Table de Cybèle, their other restaurant located in Boulogne-Billancourt. The History Cybèle Idelot forged her natural convictions in San Francisco where she grew up. From an early age, his mother gave her a taste for fresh and healthy food that they bought together directly from local producers. She also introduced her to the principles of organic farming and recycling. Having become a chef, Cybèle applied these fundamentals from the start of her professional experience, whether she officiated in Saint-Barth or in the Hamptons. In 2013, she brought her responsible and zero waste cuisine to France with the opening of La Table de Cybèle. Building on the success of their restaurant and eager to follow through on their convictions, Cybèle and her husband set out to become almost self-sufficient and set off in search of land where they could run a vegetable garden and a permaculture orchard. They had a crush for a former post house installed in a wooded park near Paris! They decide to install a "farm-inn" there which they will equip with rooms and a restaurant. The Table La Ruche offers sincere and creative cuisine and offers a light and conscientious seasonal menu for vegetarians and omnivores. Farm to Table is the latest fooding trend. Samia Gharet and Pierre-Louis Guérin apply this concept to their organic farm in the Pays de Redon in southern Brittany. Their restaurant, La Morinais, which has just been awarded the Ecotable label, serves four days a week a unique menu freshly prepared by chef Calixte Martinière from their own exploitation or supplied from neighboring farms. The small family farm in La Morinais has been offering traditional cuisine for thirty years. The new generation is adapting to the times, and bringing its agriculture and restaurant into the organic era. They have just been labeled Ecotable (3 macaroons), a guarantee of eco-responsible practices and sustainable food. At the head of this initiative, Pierre-Louis Guérin, the heir to the farm, and his wife Samia Gharet, work to offer almost all the dishes on the menu with all their hearts and arms. From the management of the herd of Landes de Bretagne ewes and rustic poultry, to the upkeep of the vegetable garden, herbs and orchard, they offer top quality products to the chef for the preparation of the menu. And to complete the cook's needs, they get their supplies from around thirty local certified organic producers: meat, dairy products, drinks... " For us, being a farmer means, on our small scale, being an actor in biodiversity. This is why we have chosen organic farming.."
